This is one of my boyfriend’s favorite desserts, ever! The recipe I knew and I used included not only butter but also eggs. To make him happy, I decided to look for a solution and I tried to see if anyone had already veganized these wonderful vegan cupcakes with a melting dark chocolate heart!
I have to say that I found a couple of interesting recipes. I did my experiments, taking inspiration and adjusting a bit here and there and today I am presenting you my conclusion. I would say that there’s almost no difference with the original version!
Make a wise use of these wonderful mini cakes … They are very fast and you can freeze them in advance, to bring out one at a time, just when you want!
Ingredients for 6:
100 gr of dark chocolate
40 gr of cocoa powder
2 tablespoons of brown sugar
40 grams of rice oil
40 grams of whole wheat
30 grams of starch
1 pinch of salt
two teaspoons of baking powder
a glass of rice or soy milk
Powdered sugar to taste
20 minutes preparation + 7-10 minutes baking

Melt the chopped chocolate over very low heat. Meanwhile, in a bowl, mix the rice oil, the brown sugar, the cocoa powder, the flour, the starch, the baking powder and a pinch of salt.
Now add the rice milk slowly, stirring well with a whisk and then the melted chocolate. The ingredients must mix up very well.
Now you can oil your aluminum molds (I noticed that, using silicone molds, you can not bring well the cupcakes out when it’s time to serve them), sprinkle them with more cocoa (or flour) and pour the dough into them, leaving at least 1 cm from the edge because they will grow while baking.
Turn on the oven, bringing it to 200 ° C of temperature and bake the pies lowering the temperature to 180 ° C. They have to cook for about 7 minutes.
As soon as there are small cracks on the surface, the cupcakes are ready. As you can imagine, this preparation is not worth the toothpick test.
You can now eat them dusted with powdered sugar!
The molds filled with raw dough can easily be freezed and pulled out of the freezer when you fancy a sweet cuddle. Without waiting for thawing, just put them in the oven by following the instructions I gave you before.
Cook them maybe with the foresight to keep them at least two more minutes! 😉
